Split Pea Soup

Reeces Cups

Ingredients:

  • One 12 oz bag of melted chocolate chips
  • 1 1/2 cups of crushed graham crackers
  • 1 1/2 cups of peanut butter
  • 1 cup of melted butter
  • 4 cups of powdered sugar

Directions:

  1. Mix all ingredients together except melted chocolate chips and spread into a 13×9 inch pan
  2. Pour chocolate on top and cool
  3. Cut into 1 inch squares

Homemade Almond Roca

Ingredients:

  • 1 giant Hershey bar, finely graded
  • 3 3 oz bags of almonds, finely chopped
  • 1 lb butter
  • 2 cups sugar

Directions:

  1. Mix together Hershey bar and almonds
  2. Spread half on foil lined cookie sheet
  3. In big sauce pan, melt together butter and sugar until 300 degrees with candy thermometer
  4. Pour over the chocolate and almond mixture and the remainder of chocolate and almonds on top
  5. Cool and break it up

YUM!

 

 

Popcorn Balls

Ingredients:

  • 2 cups of sugar
  • 2/3 cups white Karo syrup
  • 2/3 cups of boiling water
  • 2 tablespoons vinegar
  • 2 teaspoons cream of tartar
  • 2 tablespoons butter
  • 2 teaspoons vanilla
  • 1/8 teaspoons baking soda

Directions:

  1. Mix 2 cups of sugar, 2/3 cups white Karo syrup, 2/3 cups of boiling water and 2 tablespoons vinegar in water
  2. When it starts to boil, add 2 teaspoons cream of tartar
  3. Boil to 270 degrees, then add 2 tablespoons of butter, 2 teaspoons of vanilla and 1/8 teaspoons of baking soda
  4. Pour over popped corn and shape into balls

Porcupine Meatballs

Ingredients:

  • 1 pound hamburger
  • 1/2 cup of uncooked regular rice
  • 1/2 cup water
  • 1/3 cup of chopped onion
  • 1 teaspoon of salt
  • 1/2 teaspoon of celery salt
  • 1/8 teaspoon of garlic powder
  • 1/8 teaspoon pepper
  • 1 can (15 oz) of tomato sauce
  • 1 cup of water
  • 2 teaspoons Worcestershire sauce

Directions:

  1. Mix hamburger, ride, 1/2 cup of water, the onion, salt, celery salt, garlic powder and pepper
  2. Shape mixture by rounded tablespoonfuls into 12 balls
  3. Cook meatballs in 10 inch skillet until brown on all sides then drain
  4. Mix remaining ingredients, pour over meatballs
  5. Heat to boiling; reduce heat
  6. Cover and simmer for 45 minuets
  7. (add water during cooking if necessary)

 

Baked Mushroom with Crab Meat

Ingredients:

  • 1 1/2 cups of crab meat, fresh, frozen or canned
  • 2 tablespoons of butter or margarine
  • 4 tablespoons of green onion, finely chopped
  • 1 cup of medium white sauce
  • 1/2 to 1/2 teaspoon of lemon juice
  • Salt
  • White pepper
  • 18 to 24 mushrooms tops

*Preheat oven to 350*

Directions:

  1. Melt the butter in a heavy 8” or 10” skillet over moderate heat
  2. Saute green onion, stirring constantly, for 2 minuets or until soft
  3. Stir in crab meat and toss with onions for 10 seconds
  4. Transfer mixture into a large bowl
  5. Stir in white sauce and season to taste with lemon juice, salt and pepper
  6. Lightly butter shallow pan large enough to hold mushroom tops in one layer
  7. Sprinkle insides of tops with salt
  8. Spoon in crab filling and arrange in pan.
  9. Bake in 350 degree oven for 10-15 minuets until mushrooms are tender when pierced with a knife and filling is bubbly
  10. Serve on heated platter

Wacky Cake

Ingredients:

  • 2 1/4 cup of flour
  • 1 1/2 cup of sugar
  • 4 1/2 tablespoons of cocoa
  • 1/2 teaspoon of salt
  • 1 1/2 teaspoons of baking soda
  • 1 1/2 teaspoons of vanilla
  • 1 1/2 tablespoons of vinegar
  • 9 tablespoons of cooking oil
  • 1 1/2 cup of cold water

*Preheat oven to 350 degrees*

Frosting Ingredients:

  • 1 lb box of pure cane powdered sugar
  • 1/4 cup of milk
  • 1 teaspoon vanilla extract
  • 1 stick of salted butter (softened)

Frosting Directions

  1. Mix all ingredients together and beat with electric mixer for 2 minuets
  2. Scrape bowl often

Directions:

  1. In a 9×13 cake pan, add all dry ingredients
  2. Make three wells with a spoon,
    1. In one part, put in 1 1/2 teaspoons of vanilla
    2. in the seconds, put in 1 1/2 tablespoons of vinegar
    3. In the third, put in 9 tablespoons of cooking oil
  3.  Pour in 1 1/2 cups of cold water over all ingredients in the pan
  4. Mix well with a spoon
  5. Bake at 350 degrees for 30-35 minuets
  6. Let cake cool, then add frosting

Korina’s Breakfast Potatoes

Ingredients: 

  • Cube butter (melted
    • Reserve two or three tablespoons for the top
  • Small container of sour cream
  • One can of cream of chicken soup
  • 1 cup of shredded cheese
  • 2 cups of Corn Flakes

Directions:

  1. Mix all ingredients together and put it in a baking dish
  2. Crush 2 cups of corn flakes to put on top
  3. Drizzle your remaining two or three tablespoons of butter on top
  4. Bake in the oven on 360 for one hour

Oriental Chicken Salad

Ingredients:

  • 2 large chicken breasts
  • A head of cabbage
  • 5 sliced green onions
  • 1 8 oz package of cubed Jack cheese
  • 5 oz can of sliced black olives
  • 2 packages of top ramen noodles
  • 1/2 cup of sunflower seeds or almond slivers
  • 2 tablespoons olive oil

Dressing ingredients:

  • 1/4 cup of rice vinegar
  • 1/2 cup of vegetable oil
  • 2 tbs of sugar

Dressing:

  1. Mix all ingredients together in a container with a tight closing lid
  2. Shake until well blended

Directions:

  1. Cut up the 2 chicken breasts into bite sized pieces
  2. In a skillet, saute the chicken in 2 tablespoons of olive oil until slightly browned and set aside
  3. In a large bowl, cut up the head of cabbage and put in the bowl
  4.  Add the remaining ingredients, and then add the chicken
  5. Add the dressing recipe below
  6. Toss well
  7. Just before serving, add two packages of crushed top ramen into the salad and serve
